This is a very healthy and delicious potato salad recipe ! Easy to make and ideal for picnics and get togethers.
Ingredients for our potato salad recipe:
4 Red potatoes cooked and cut in small pieces
1200g of green beans cooked steamed and cut into small pieces
1/2 red onion cut into thin slices
280g of spinash leaves or ‘mèche’
1 cucumber peeled and cut into slices
80g of cashew nuts
TO MAKE THE MINT SAUCE MIX :
3 table spoons of natural yogourt
Juice of 1 lemon
4 mint leaves cut into small pieces
Mix all the ingredients together and add salt and pepper to taste !
